I used to think that eating healthy meant boring, bland, lifeless food. I was fine with a few extra pounds on my waist in exchange for eating "good" food. That thinking led me north of 330lbs. Ouch. Sedentary and stubborn... Wow was I wrong. Dead wrong. Fast forward a few years. I little lighter, a lot smarter, and enjoying food not just eating it.

Kale Wonton souffle

Thank you for the recipe Erica Lev. had to substitute kale for spinach, and mozzarella for cheddar. Still delicious!
